Beach Cake

This is a cake I baked for my friend's kid's 9th birthday. He loves beaches and beach games, so obviously it  had to be a beach themed cake. All the sculptures are edible and handmade. I used a 9*12 inch marble cake as the base.You can use any flavored cake, and I think for beach cake it is better to have a rectangular shape.

Decorations:
  • For beach sand, I used graham crackers, crushed in a blender.
  • Water effect was given by blue pipe gel. (You can buy it from any shop like Safeway, Michaels etc)
  • For beach accessories, I used this link as a reference. The instructions are pretty easy.

Tiramisu - No raw eggs, no liquor

Tiramisu with cooked eggs


Tiramisu is one of my favorite desserts, but I was a bit concerned that it is made using raw eggs. I tried a recipe with cooked eggs and I couldn't tell the difference! Also, to make it kid friendly I made it without alcohol and it came out pretty good. Here is the recipe:

Ingredients

  • Lady Fingers - 1/2 lb.
  • Mascarpone cheese - 1 lb.
  • Egg yolks - 6
  • Vanilla essence - 1 tsp.
  • Brewed coffee - 1.5 cup
  • White sugar - 3/4 cup
  • Milk - 2/3 cup
  • Heavy whipped cream - 1 cup
  • Rum - 1 tablespoon (optional)
  • Cocoa powder - 1 tbsp.


Method of Preparation

Whisk egg yolks and sugar in a mediam saucepan. Once it is totally blended, add milk and  boil the mixture in medium heat. Stir continuously and wait for it to start boiling. Allow it to boil gently for one minute. Remove the saucepan from the stove and allow it to cool to room temperature. After it cools to room temperature, cover it and keep it in the refrigerator for 1 hour.

Beat heavy whipped cream in a medium bowl using medium speed until soft peaks form. Add vanilla essence and mascarpone cheese. Mix well and fold the egg mix to this mixture.

In a small bowl, combine brewed coffee and rum (Rum is optional).

Soak the ladyfingers in coffee and arrange it in a 7 * 11 inch glass pan. After covering the bottom of the pan with a first layer of lady finger, spread half of the mascarpone cheese mix. Add one more level of dipped lady fingers and repeat. Cover and refrigerate overnight.

Sprinkle cocoa powder just before serving. Use a sieve to sprinkle cocoa powder in a uniform fashion.

Baby Crib cake


For my friend's baby shower party, I decided to try a baby crib cake, which I was craving to make for a long time. Since she loves Eeyore I planned to include Winnie's theme also in the cake. All parts of the cakes are edible. Winnie, Eeyore, shoes and towels are made of marshmallow fondant.The cake inside is a marble cake with butter cream icing, and crib railings are made with chocolate.

Christmas Cake

This is my first fondant cake, so it will always be my favorite. We have a wonderfully close-knit group of friends near where we live, and last year my husband and I hosted a Christmas party for them at our home. It was a potluck and since the ladies (hmm yeah, some boys too) in the gang are good cooks, we didn't have much to do before the party except planning some games and wrapping gifts, so I decided to try my luck with the Christmas cake. 




I used 2 nine inch cakes, one chocolate & one pound flavor and butter cream icing in the middle. The cake is covered with homemade fondant and snowman & bow are made of fondant.
